Abstract This master introduces a facile method to determine in a quantitative manner the amount of diglycerides and total sterols in milk. This method is based n the phosphitylation of the free hydroxyls of diglycerides and sterols with 2-chloro-4,4,5,5-tetramethl dioxaphospholane and the integration of the appropriate signals in the 31P-NMR spectrum. This analytical approach can be extended to the quantification of diglycerides and total sterols in dairy products.
