Abstract |
Two-dimensional NMR spectroscopy has been used for a complete assignment of the proton and carbon-13 spectra of ten mycotoxins, namely four mycotoxins from trichothecenes family (Verrucarin A, Roridin A, T-2 toxin and Diacetoxyscripenol), two mycotoxins from the family of toxic lactones (Patulin and Penicillic acid), Sterigmatocystin, Citrinin, Mycophenolic acid, and Rubratoxin B, which constitute a group of toxic metabolites produced by several species (fungi and moulds). These toxins contaminate a wide variety of foodstuff and represent a serious threat both to humans and animals. In addition, phase-sensitive NOESY experiments and computational molecular modeling (MM2* and MMFF force field programs) have been employed to examine the conformational properties of Verrucarin A and Rubratoxin B in vacuum and in solutions. Finally, some preliminary information has been given about the relationship structure-toxic properties of the mycotoxins of the present study on the basis of relevant information derived from literature.
