Abstract The problem of illnesses that emanates from the consumption of unsafe foods, receives in the past few year increasing dimensions in world level. The mass feeding establishments and particularly those of Public Hospitals, are from their nature regions of high venturousness, because they serve frail demographic groups (patients, individuals with immunological suppresion, elderly people, pregnant etc.) which are exposed in the menace of epidemics of foodborne explanation or in the dissemination of Νosocomial Infections via served foods and their production procedure. Taking into consideration, the epidemic outbreak of Salmonella enterica, in July 2005 at the University General Hospital of Iraklion (PaGNI), the appearance of new alimentary dangers, as well as, the insistence of already acquaintances in the system of mass feeding, becomes obvious that the application of Preventive System of Hygiene of Foods H.A.C.C.P. in these establishments is imperative need. The H.A.C.C.P. (Hazard Analysis of Critical Control Point), is a system special drawn for the guarantee of food safety and its application in the Food Departments of Public Hospitals, ensures the requirement for high quality foods, that will combine desirable organoleptic characteristics with the highest possible safety for fragile health groups, that goes through the Hospitals. The aim of the present work is to present, how a System of Guarantee of Safety of Foods H.A.C.C.P., can and should be applied in a Food Department of Public Hospital, the dangers that has to face and to anticipate, as well as, the most important feeble points and failures, that lead the foods managing at risk in Food Departments of Public Hospitals. As confirmation of permanent requirement for the monitoring of safe processes of foods production in Food Departments of Public Hospitals, the incident of foodborne outbreak of Salmonella enteritica, which affected the Food Department of University General Hospital of Iraklion (PaGNI), is being presentated and analyzed.
