Abstract Whey cheeses are high nutritious value cheeses, traditionally produced in Crete, widely consumed, either as untreated products or as raw materials in pies and dough products. Their physicochemical characteristics make them ideal for growth of pathogens, especially of the Listeria monocytogenes. The purpose of this study was to investigate the microbiological status of whey products and their production stages. Samples from surfaces and foods were collected from 7 cheese dairies in the Prefecture of Chania, 1 cheese dairy in the Prefecture of Rethymno and 2 food processing factories in the Prefecture of Iraklio. After each sampling, followed microbiological analysis for the detection of Εscherichia coli, Staphylococcus aureus, Listeria monocytogenes and Salmonella spp. The results of the analysis showed presence of these microorganisms (except Salmonella), in all production stages, in untreated whey cheeses , in intermediate products and in unheated final products, due to non-observance of procedures for disinfection and sanitation and also due to cross-contamination of foods. No presence of pathogens was observed in heated final products, proving that the heat processing disinfects food. In conclusion, it seems that there is no danger for consumer’s health by consuming heated final whey products, while the consumption of untreated whey cheeses may be cause of food-borne poisonings, especially for sensitive groups of the population.
