Abstract Quality control in food products is of great importance nowadays. It is often associated with modern analytical methods and procedures which are expensive and time consuming. So, the need has arisen of alternative approaches that are of low cost, non-destructive, can provide rapid information regarding the identity and quality of agrofoods products. In this contribution, absorption, FT-IR, fluorescence and diffuse reflectance spectroscopy coupled with statistical analysis has been applied in commercially available milk samples so as to correlate them with the different animal origin and the fat percentage. Additionally, sheep milk samples from different breeding sites in Crete have been studied in order to be discriminated according to their geographical origin. The adulteration of milk with water and milk of different species was also studied. Another product that was studied is the extra virgin olive oil. We used absorption and Raman spectroscopy with statistical data analysis to study Cretan extra virgin olive oil adulterated with seed oils. and also varietal and regional mixes of extra virgin olive oil. The mixtures of three different varieties of Lesvos olive oil as well as the mixtures of olive oil of the same variety coming from three different places were also investigated in order to discriminate them. Finally, some basic studies have been conducted in snail mucus, an important ingredient in cosmetics industry. These studies demonstrate the potential of the optical spectroscopy as a sufficient alternative to the classical analytical methods.
