Abstract The geographical and botanical classification of virgin olive oils from various regions of Greece was determined by employing a combination of 31P and 1H NMR spectroscopy, and chemometrics. This preliminary work is the first attempt to establish authentication and labeling of Greek virgin olive oils. NMR spectroscopy was used to analyze 132 virgin olive oil samples from Crete, Peloponisos, Lesvos and Pilion harvested in three consecutive years (2001-2003). These virgin olive oils were extracted from three olive cultivars, namely koroneiki (Crete, Peloponisos), kolovi (Lesvos), and a local variety from Pilion. Subsequent statistical analyses were applied on the chemical composition of the various samples obtained by the NMR technique, upon employing ANOVA, the unsupervised methods of Principle Components Analysis (PCA), Cluster Analysis (CA), and the supervised method of Discriminant Analysis (DA). The unsupervised methods were unsuccessful in classifying the olive oil samples, whereas the supervised method DA was able to classify in a satisfactory manner these olive oils with respect to their geographical and botanical origin. The same statistical method was used to study the effect of the harvest period and cultivar on the olive oil geographical characterization.
