Abstract |
In recent years HR-MAS 1H NMR spectroscopy has proven to be a useful tool for the rapid determination of the metabolic profile of several solid and semisolid foods, such as fruits and vegetables, 1 cheese 2and meat 3. Olive leaves are increasingly recognized as direct sources of the same natural antioxidants that can be found in olive oil. The use of olive leave extracts as a source of natural antioxidants (flavonoids, secoiridoids) to be used as food additives is a subject of active research. Olive leave components are found today as beauty care products and are almarketed as tea bags or in raw form, suitable for the preparation of hot beverages. Thus, olive leaves are emerging as a new and potentially important product for olive tree growing regions.
In this report we present the application of 1H and 13C HR-MAS 1D and 2D NMR spectroscopy for the characterization and metabolomic analysis of solid olive leaves. HR-MAS NMR spectral analysis in three solvents of different polarity is presentedand compared directly with the more traditional approach of high resolution liquidstate NMR analysis of leaf solvent extracts of the same leave samples. The effect of olive tree variety on the relative abundance of bioactive triterpenoids in leaves is also studied, along with the variations in olive leave triterpenoid distribution during the oil cultivating season.
