Abstract |
Grape pomace constitutesthe main by-product of vinification and comprisesthe
pulp of grape skins, seeds and stems. Grape pomace contains a wide variety of
organic compounds, including polyphenols which can be found in large
amounts. Their presence in pomace renders its disposal quite hazardous, due to
the toxic effects they might instigate. The present study focuses on the
qualitative analysis of polyphenols in grape pomace and the treatment with
microorganisms, in order to reduce their levels. The research was conducted on
pomace from the grape variety of ‘Kotsifali’, a native variety cultivated in Crete.
The pomace was dried and later pulverised in order to obtain a proper form for
secondary processing. Subsequently, microbial cultures were created with the
pomace, utilizing the commercial products Uniker, Multicraft and Microferm,
which contain a variety of microorgasims. In addition, experiments were carried
out with Chlorella, a photosynthetic microorganism, and Saccharomyces
cerevisiae. The samples obtained from the cultures were analyzed with HPLCHigh Performance Liquid Chromatography, for the exact monitoring of
polyphenol levels. The purpose was to ascertain, whether the microorganisms
could potentially biodegrade polyphenols, lead to the reduction of their levels
in pomace and thus contribute to pomace’s bioremediation and safe disposal.
